Ingredients

Fruits and liquids

  • 1 medium avocado (ripe)
  • 2 limes limes (for juice)
  • 1 cup unsweetened coconut milk
  • 1/4 cup water
  • 2 tablespoons erythritol (sweetener)
  • 1/2 teaspoon vanilla extract
  • Ice cubes Ice cubes (optional)
  • Fresh mint leaves Fresh mint leaves (for garnish)

Instructions 

  • Slice the avocado, remove the pit, and scoop into a blender.
  • Add lime juice, coconut milk, water, erythritol, and vanilla to the blender.
  • Blend until smooth; add ice if desired and blend again.
  • Taste and adjust sweetness or tartness as needed.
  • Pour into glasses, garnish with mint leaves, and serve immediately.
