A low-carb, cheesy, and flavorful keto-friendly dish featuring zucchini boats stuffed with seasoned chicken and topped with melted cheese.

Ingredients

Vegetables

  • 4 medium zucchinis (washed and halved)
  • 1 lb ground chicken
  • 1 cup marinara sauce (low sugar, keto-friendly)
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • for garnish Fresh parsley (chopped)

Instructions 

  • Preheat oven to 375°F (190°C). Prepare zucchini boats by halving and scooping out insides.
  • Cook minced garlic in olive oil, add ground chicken, and cook until no longer pink.
  • Chop zucchini flesh, add to skillet, and cook 2-3 minutes. Mix in marinara and seasonings.
  • Stuff zucchini boats with chicken mixture, top with Parmesan and mozzarella cheese.
  • Bake for 20-25 minutes until cheese is bubbly and golden. Garnish with parsley before serving.

Notes

For best results, use fresh ingredients and monitor cheese melting to prevent burning.
