Instructions
Preheat oven to 375°F (190°C). Prepare zucchini boats by halving and scooping out insides.
Cook minced garlic in olive oil, add ground chicken, and cook until no longer pink.
Chop zucchini flesh, add to skillet, and cook 2-3 minutes. Mix in marinara and seasonings.
Stuff zucchini boats with chicken mixture, top with Parmesan and mozzarella cheese.
Bake for 20-25 minutes until cheese is bubbly and golden. Garnish with parsley before serving.
