Ingredients

Meat

  • 1.5 lbs lamb chops (1 inch thick)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter

Instructions 

  • Pat lamb chops dry and prepare marinade with olive oil, garlic, rosemary, salt, and pepper.
  • Rub marinade on chops and rest at room temperature for 10 minutes.
  • Preheat skillet over medium-high heat and sear chops 3-4 minutes per side.
  • Add butter, flip, and cook for another 3-4 minutes for medium-rare.
  • Rest for 5 minutes before serving.
