Instructions
Combine spices and rub onto lamb; marinate for 8+ hours.
Heat olive oil and sear lamb until browned.
Sauté onions and carrots; add garlic, lemon zest, and ginger.
Add broth, tomato paste, honey, and lamb; simmer 1.5-2 hours.
Thicken sauce with cornstarch slurry; prepare couscous with boiling water, olive oil, and salt.
Notes
For best flavor, marinate lamb overnight and serve with toasted nuts or dried fruits.
