A flavorful and creamy chicken dish infused with lemon and fresh basil, perfect for a quick dinner.

Ingredients

Protein

  • 2 large boneless skinless chicken breasts (cut in half lengthwise)
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried basil (or 1 tablespoon chopped fresh basil)
  • 0.25 teaspoon onion powder
  • 0.5 cup low sodium chicken broth
  • 0.75 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • to taste Salt and pepper
  • 0.5 tablespoon fresh chopped parsley
  • 1 lemon thinly sliced lemon

Instructions 

  • In a large skillet, heat 1 tablespoon olive oil and brown chicken on both sides. Keep warm.
  • Add 1 tablespoon olive oil to the skillet, cook garlic, basil, and onion powder for 30 seconds.
  • Pour in chicken broth, scrape brown bits, then add cream and simmer until thickened (10-15 mins).
  • Stir in lemon juice, season with salt and pepper, then return chicken to skillet and cook 5 more minutes.
  • Garnish with parsley and lemon slices before serving.

Notes

For extra flavor, marinate chicken with lemon and basil beforehand.
