A moist and flavorful bread bursting with fresh blueberries and zesty lemon, perfect for breakfast or a snack.
Ingredients
Dough

white sugar

cup
melted butter, cooled

eggs

lemon juice

all-purpose flour

baking powder

teaspoon
salt

milk

fresh or frozen blueberries

grated lemon zest

chopped walnuts (optional)

powdered sugar

lemon juice (for glaze)
Instructions
Preheat oven to 350°F (175°C). Grease an 8x4-inch loaf pan.
Mix melted butter, sugar, eggs, and lemon juice. In a separate bowl, combine flour, salt, and baking powder.
Add 1/3 of the flour to wet ingredients, then half of the milk. Repeat with remaining flour and milk, mixing gently.
Toss blueberries, lemon zest, and walnuts (if using) with the last 1/3 of flour, then fold into batter.
Pour batter into pan and bake for 60-70 minutes. Cool for 10 minutes before glazing.
Mix powdered sugar with lemon juice to make glaze. Pour over cooled bread and let set.
Notes
For extra flavor, add more lemon zest or blueberries.
