Lemon Blueberry Bread

A moist and flavorful bread bursting with fresh blueberries and zesty lemon, perfect for breakfast or a snack.

Ingredients

Dough

  • 1 cup white sugar
  • 1/3 cup melted butter, cooled
  • 2 large eggs
  • 3 tablespoons lemon juice
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons grated lemon zest
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup powdered sugar
  • 2-3 tablespoons lemon juice (for glaze)

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8x4-inch loaf pan.
  • Mix melted butter, sugar, eggs, and lemon juice. In a separate bowl, combine flour, salt, and baking powder.
  • Add 1/3 of the flour to wet ingredients, then half of the milk. Repeat with remaining flour and milk, mixing gently.
  • Toss blueberries, lemon zest, and walnuts (if using) with the last 1/3 of flour, then fold into batter.
  • Pour batter into pan and bake for 60-70 minutes. Cool for 10 minutes before glazing.
  • Mix powdered sugar with lemon juice to make glaze. Pour over cooled bread and let set.

Notes

For extra flavor, add more lemon zest or blueberries.
