Instructions
Sauté chopped celery, carrots, and onion in butter and olive oil for 5-7 minutes until softened.
Stir in minced garlic and cook for 30 seconds. Add flour and cook for 1 minute to make a roux.
Pour in chicken broth, add Italian seasoning and chicken breasts; bring to a boil, then simmer for 15 minutes.
Stir in orzo and cook uncovered for 10 minutes until tender. Remove chicken, chop, return to pot, add lemon juice, and garnish with parsley.
Notes
For extra flavor, add a squeeze of lemon just before serving.
