A comforting and flavorful soup combining tender chicken, orzo, and fresh lemon for a bright, satisfying meal.

Ingredients

Vegetables

  • 2 sticks celery (chopped)
  • 2 medium carrots (peeled & chopped)
  • 0.5 medium onion (chopped)

Fats & Oils

  • 1 tablespoon butter
  • 1 tablespoon olive oil

Aromatics

  • 3 cloves garlic (minced)

Thickening Agents

  • 2 tablespoons flour

Broth & Liquids

  • 6 cups chicken broth
  • 1.5 pounds uncooked chicken breasts

Grains

  • 1 cup uncooked orzo

Seasonings & Flavorings

  • 1 tablespoon lemon juice (or to taste)

Garnishes

  • Fresh parsley (for garnish)

Instructions 

  • Sauté chopped celery, carrots, and onion in butter and olive oil for 5-7 minutes until softened.
  • Stir in minced garlic and cook for 30 seconds. Add flour and cook for 1 minute to make a roux.
  • Pour in chicken broth, add Italian seasoning and chicken breasts; bring to a boil, then simmer for 15 minutes.
  • Stir in orzo and cook uncovered for 10 minutes until tender. Remove chicken, chop, return to pot, add lemon juice, and garnish with parsley.

Notes

For extra flavor, add a squeeze of lemon just before serving.
