Instructions
Sauté celery, carrots, and onion in butter and oil for 5-7 minutes.
Add garlic, cook 30 seconds, then stir in flour and cook 1 minute.
Pour in chicken broth, add Italian seasoning and chicken, bring to boil.
Simmer covered for 15 minutes, then add orzo and cook 10 minutes.
Remove chicken, chop, return to pot, add lemon juice, parsley, salt, and pepper. Serve.
Notes
Use fresh lemon juice for best flavor and adjust seasoning to taste.
