A comforting and flavorful soup combining tender chicken, orzo, and fresh lemon for a bright, satisfying meal.

Ingredients

Vegetables

  • 2 sticks celery, chopped finely
  • 2 medium carrots, peeled & chopped finely
  • 1/2 medium onion, chopped

Fats & Oils

  • 1 tablespoon butter
  • 1 tablespoon olive oil

Aromatics

  • 3 cloves garlic, minced

Thickening & Seasoning

  • 2 tablespoons flour

Broth & Liquids

  • 6 cups chicken broth
  • 1/4 teaspoon Italian seasoning

Main Protein

  • 1.5 pounds uncooked chicken breasts

Grains & Pasta

  • 1 cup uncooked orzo

Finishing & Garnish

  • 1 tablespoon lemon juice, or to taste
  • 1 tablespoon chopped fresh parsley, or to taste
  • Salt & pepper to taste

Instructions 

  • Sauté celery, carrots, and onion in butter and oil for 5-7 minutes.
  • Add garlic, cook 30 seconds, then stir in flour and cook 1 minute.
  • Pour in chicken broth, add Italian seasoning and chicken, bring to boil.
  • Simmer covered for 15 minutes, then add orzo and cook 10 minutes.
  • Remove chicken, chop, return to pot, add lemon juice, parsley, salt, and pepper. Serve.

Notes

Use fresh lemon juice for best flavor and adjust seasoning to taste.
