Instructions
Melt butter and olive oil in a large pot. Sauté celery, carrots, and onion until softened, about 5–7 minutes.
Add garlic and cook for 30 seconds. Stir in flour and cook for 1 minute.
Pour in chicken broth, add Italian seasoning and chicken breasts. Bring to a boil, then simmer for 15 minutes.
Add orzo and cook uncovered until tender, about 10 minutes. Remove chicken, chop, and return to soup. Stir in lemon juice and parsley, season with salt and pepper.
Notes
For extra flavor, add a squeeze of lemon just before serving.
