Instructions
Melt butter and olive oil in a large pot. Sauté celery, carrots, and onion until softened.
Add garlic and flour; cook briefly. Whisk in chicken broth and seasonings; simmer.
Add chicken breasts; cook until done. Remove, shred, and return to the pot.
Bring broth to a boil, add orzo, and cook until tender. Stir in lemon juice, parsley, salt, and pepper.
Notes
For extra flavor, add a squeeze of lemon just before serving.
