A comforting and flavorful soup combining tender chicken, orzo, and fresh lemon for a bright, satisfying meal.

Ingredients

Vegetables

  • 2 sticks celery (finely chopped)
  • 2 medium carrots (peeled and chopped)
  • 1/2 medium onion (chopped)

Fats & Oils

  • 1 tablespoon butter
  • 1 tablespoon olive oil

Garlic & Flour

  • 3 cloves garlic (minced)
  • 2 tablespoons all-purpose flour

Broth & Seasonings

  • 6 cups chicken broth
  • 1/4 teaspoon Italian seasoning

Chicken & Pasta

  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo

Finishing & Seasoning

  • 1 tablespoon fresh lemon juice (or to taste)
  • 1 tablespoon chopped fresh parsley (or to taste)
  • Salt and freshly ground black pepper to taste Salt and pepper

Instructions 

  • Melt butter and olive oil in a large pot. Sauté celery, carrots, and onion until softened.
  • Add garlic and flour; cook briefly. Whisk in chicken broth and seasonings; simmer.
  • Add chicken breasts; cook until done. Remove, shred, and return to the pot.
  • Bring broth to a boil, add orzo, and cook until tender. Stir in lemon juice, parsley, salt, and pepper.

Notes

For extra flavor, add a squeeze of lemon just before serving.
