Delight in these tangy lemon coconut bars with a buttery crust and sweet shredded coconut topping.

Ingredients

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cups sugar
  • 0.25 tsp salt

Filling

  • 0.75 cups butter, softened (Use room temperature butter for best results.)
  • 4 large eggs
  • 1.5 cups sugar
  • 0.25 cups flour
  • 0.5 cups lemon juice (Fresh lemon juice is recommended.)
  • 1 tsp lemon zest (Use a microplane or fine grater for zest.)

Topping

  • 1 cups shredded coconut (Sweetened shredded coconut works best.)

Instructions 

  • Preheat oven to 350°F (175°C). Mix flour, sugar, and salt; press into a baking pan to form the crust. Bake for 15 minutes.
  • In a bowl, whisk eggs, sugar, flour, lemon juice, and lemon zest until smooth. Pour over the baked crust.
  • Sprinkle shredded coconut evenly over the filling.
  • Bake for an additional 15 minutes until set and golden.
  • Allow to cool before slicing into bars. Serve and enjoy!

Notes

For best flavor, use fresh lemon juice and room temperature butter.
