Delight in these tangy lemon and coconut sugar cookies, perfect for a sweet and zesty treat.

Ingredients

Sugar for rolling

  • 0.5 cups Demerara, Turbinado or raw sugar (for rolling)
  • 1 cup cold butter
  • 1.5 cups granulated sugar
  • 1 egg egg
  • 1 teaspoon vanilla
  • 2 medium medium-size lemons (finely grated zest from two lemons)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 cups flour
  • 1 cup sweetened shredded coconut

Instructions 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Microwave butter until partially melted, then stir in 1.5 cups sugar, egg, lemon zest, lemon juice, and vanilla until combined.
  • Mix in baking soda, baking powder, salt, flour, and coconut just until incorporated.
  • Scoop 2-tablespoon portions, roll in Demerara sugar, and place 2 inches apart on baking sheets.
  • Bake for 13-15 minutes until edges are golden. Cool on sheets 2-3 minutes, then transfer to wire racks.

Notes

Use fresh lemon zest for the best flavor.
