Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Microwave butter until partially melted, then stir in 1.5 cups sugar, egg, lemon zest, lemon juice, and vanilla until combined.
Mix in baking soda, baking powder, salt, flour, and coconut just until incorporated.
Scoop 2-tablespoon portions, roll in Demerara sugar, and place 2 inches apart on baking sheets.
Bake for 13-15 minutes until edges are golden. Cool on sheets 2-3 minutes, then transfer to wire racks.
