  • 5 lb whole chicken, cleaned and patted dry
  • 0.5 cup unsalted butter, softened
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • Zest Of 4 lemons (Lemon zest)
  • Salt and freshly ground black pepper, to taste Salt and pepper (Seasoning to taste)
  • Juice of 2 lemons fresh lemon juice
  • 2 large sprigs fresh rosemary, finely chopped
  • 1 teaspoon dried thyme
  • 1-2 lemons sliced lemons
  • 1 large onion, sliced
  • 3 sprigs fresh rosemary

Instructions 

  • Preheat oven to 375°F (190°C). Pat the chicken dry and place in a roasting pan.
  • Mix softened butter, olive oil, garlic, lemon zest, salt, pepper, and chopped rosemary. Loosen skin and rub herb butter under the skin and on the exterior.
  • Stuff cavity with sliced lemons, onion, and rosemary. Pour lemon juice over the chicken.
  • Roast for 1.5 hours until skin is crispy and internal temperature reaches 165°F (74°C).
  • Rest for 10-15 minutes before carving to allow juices to redistribute.

Notes

For extra flavor, baste the chicken occasionally during roasting.
