5lbwhole chicken, cleaned and patted dry
0.5cupunsalted butter, softened
2tablespoonsextra virgin olive oil
4clovesgarlic, minced
Zest Of 4lemons(Lemon zest)
Salt and freshly ground black pepper, to tasteSalt and pepper(Seasoning to taste)
Juice of 2lemonsfresh lemon juice
2large sprigsfresh rosemary, finely chopped
1teaspoondried thyme
1-2lemonssliced lemons
1largeonion, sliced

Instructions
Preheat oven to 375°F (190°C). Pat the chicken dry and place in a roasting pan.
Mix softened butter, olive oil, garlic, lemon zest, salt, pepper, and chopped rosemary. Loosen skin and rub herb butter under the skin and on the exterior.
Stuff cavity with sliced lemons, onion, and rosemary. Pour lemon juice over the chicken.
Roast for 1.5 hours until skin is crispy and internal temperature reaches 165°F (74°C).
Rest for 10-15 minutes before carving to allow juices to redistribute.
Notes
For extra flavor, baste the chicken occasionally during roasting.
