Instructions
Cook pasta in salted boiling water until al dente, then drain and rinse with cold water.
Heat olive oil, cook garlic for 30 seconds, add shrimp seasoned with salt and pepper, cook until pink, then cool slightly.
Whisk lemon juice, zest, olive oil, salt, pepper, and chili flakes to make dressing.
Combine pasta, shrimp, vegetables, and parsley in a large bowl, pour dressing, toss to coat, add cheese if desired, and chill before serving.
Notes
Chill for 20-30 minutes before serving for best flavor.
