Ingredients

Dry ingredients

  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • zest of 2 medium or 3 small lemons lemon zest
  • ¼ cup lemon juice
  • ¾ cup milk (whole milk preferred)
  • 1 cup plain Greek yogurt (2% or full fat)
  • 2 eggs eggs
  • 2 tablespoons honey (or pure maple syrup)
  • 1 teaspoon vanilla extract

Toppings

  • to taste fresh strawberries
  • to taste pure maple syrup

Instructions 

  • Mix dry ingredients and lemon zest in a bowl.
  • Combine lemon juice and milk; set aside.
  • Whisk Greek yogurt, eggs, honey, and vanilla; add milk mixture and stir.
  • Pour dry into wet, stir until just combined, let rest 5 minutes.
  • Cook batter on a hot, greased griddle until bubbles form, flip, and cook until golden.

Notes

Serve with fresh strawberries and maple syrup for extra flavor.
