Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 0.25 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 0.25 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon butter

Instructions 

  • Heat olive oil in a skillet and season chicken with salt and pepper.
  • Cook chicken 5-7 minutes per side until golden and cooked through, then set aside.
  • Sauté garlic in the same skillet for 30 seconds.
  • Add chicken broth and lemon juice, scraping browned bits, then simmer with herbs.
  • Return chicken to skillet, warm through, then stir in butter before serving.

Notes

For extra flavor, marinate chicken in lemon juice and herbs beforehand.
