Instructions
Preheat oven to 425°F (220°C).
Prepare the chicken, season cavity with salt and pepper, and tie drumsticks.
Mix butter, herbs, garlic, and lemon zest; loosen skin and spread half under it, then spread remaining over the chicken.
Roast until golden and internal temperature reaches 165°F (74°C), about 1 hour. Rest for 10-15 minutes.
Notes
Use kitchen twine to secure the drumsticks for even cooking.
