Ingredients

  • 1 whole 4-pound whole roasting chicken
  • 4 tablespoons unsalted butter (at room temperature)
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme leaves
  • 2 tablespoons chopped fresh parsley leaves
  • 3 cloves garlic (minced)
  • Zest of 1 lemon lemon zest

Instructions 

  • Preheat oven to 425°F (220°C).
  • Prepare the chicken, season cavity with salt and pepper, and tie drumsticks.
  • Mix butter, herbs, garlic, and lemon zest; loosen skin and spread half under it, then spread remaining over the chicken.
  • Roast until golden and internal temperature reaches 165°F (74°C), about 1 hour. Rest for 10-15 minutes.

Notes

Use kitchen twine to secure the drumsticks for even cooking.
