Ingredients

Chicken Breast

  • 2-3 pounds Chicken Breast (Boneless, skinless)

Fresh Lemons

  • 2-3 pieces Lemons (For zest and juice)

Fresh Rosemary

  • 3-4 sprigs Rosemary (Fresh sprigs)

Fresh Thyme

  • 3-4 sprigs Thyme (Fresh sprigs)

Fresh Parsley

  • 2-3 tablespoons Parsley (Chopped, fresh)

Garlic Cloves

  • 3-4 cloves Garlic (Minced)

Olive Oil

  • 2 tablespoons Olive Oil (Extra virgin)

Salt

  • to taste Salt (Kosher preferred)

Black Pepper

  • to taste Black Pepper (Freshly ground)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix lemon zest, juice, herbs, garlic, olive oil, salt, and pepper to create a marinade.
  • Rub the marinade over the chicken breasts and let sit for 10 minutes.
  • Place chicken in a baking dish and roast for 35-40 minutes until cooked through.
  • Garnish with chopped parsley and serve hot.

Notes

Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
