Ingredients

Dry ingredients

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 0.5 cup sugar
  • 1 tbsp lemon zest

Wet ingredients

  • 2 large eggs
  • 0.67 cup butter melted
  • 4 tbsp lemon juice
  • 3 tbsp lemon curd

Instructions 

  • Preheat oven to 350°F (175°C). Beat eggs and sugar until foamy.
  • Mix dry ingredients in a bowl. Add wet ingredients and combine.
  • Stir in melted butter, lemon zest, lemon curd, and lemon juice until smooth.
  • Divide batter into muffin liners and bake for 18-20 minutes.
  • Remove muffins and cool on a rack before serving.
