A flavorful and creamy chicken dish featuring lemon, Parmesan, and fresh spinach, perfect for a quick and satisfying meal.
Ingredients

(pounded to even thickness)

zest of 1 lemon

grated Parmesan cheese

Instructions
Pound chicken to even thickness, season with salt and pepper.
Heat olive oil, cook chicken 3-4 minutes per side until golden and cooked through. Remove and set aside.
Sauté garlic 1 minute, add broth, lemon juice, and zest; bring to boil. Reduce heat, stir in cream, simmer 5 minutes. Add Parmesan until melted.
Add spinach, cook 1 minute until wilted. Return chicken to pan, spoon sauce over, sprinkle with Parmesan, cover and cook 2 more minutes.
Garnish with lemon slices and extra Parmesan. Serve immediately.
Notes
For a richer flavor, use freshly grated Parmesan and fresh lemon juice.
