Lemon Parmesan Spinach Chicken

A flavorful and creamy chicken dish featuring lemon, Parmesan, and fresh spinach, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts (pounded to even thickness)
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 1 unit lemon juice (juice of 1 lemon)
  • 1 teaspoon zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • additional to taste Parmesan cheese for garnish
  • thinly sliced for garnish lemon slices

Instructions 

  • Pound chicken to even thickness, season with salt and pepper.
  • Heat olive oil, cook chicken 3-4 minutes per side until golden and cooked through. Remove and set aside.
  • Sauté garlic 1 minute, add broth, lemon juice, and zest; bring to boil. Reduce heat, stir in cream, simmer 5 minutes. Add Parmesan until melted.
  • Add spinach, cook 1 minute until wilted. Return chicken to pan, spoon sauce over, sprinkle with Parmesan, cover and cook 2 more minutes.
  • Garnish with lemon slices and extra Parmesan. Serve immediately.

Notes

For a richer flavor, use freshly grated Parmesan and fresh lemon juice.
