A fresh and zesty rice salad combining lemon, herbs, and vegetables for a light, flavorful dish.
Ingredients
Vegetables and herbs
1/4cupshallots(slice thin)
3Tablespoonsolive oil(divided)
1cuplong grain rice(rinsed well)
2cupschicken broth
1Teaspoonlemon zest
Juice of 1/2 one small lemonlemon juice
1/3cupchopped cilantro
1Teaspoonminced garlic
1/2cupfinely chopped red onion
1/2cupdiced red pepper
1/4cupgrated Parmesan cheese
salt and pepperto taste
Instructions
Saute shallots in 2 tablespoons olive oil until soft. Add rice, saute 2-3 minutes. Add broth, bring to boil, then simmer 15 minutes. Let stand 5 minutes.
Fluff rice, cool completely. Add lemon zest, juice, herbs, garlic, onion, red pepper, Parmesan, and remaining olive oil. Gently stir and serve.
