A fresh and zesty rice salad combining lemon, herbs, and vegetables for a light, flavorful dish.

Ingredients

Vegetables and herbs

  • 1/4 cup shallots (slice thin)
  • 3 Tablespoons olive oil (divided)
  • 1 cup long grain rice (rinsed well)
  • 2 cups chicken broth
  • 1 Teaspoon lemon zest
  • Juice of 1/2 one small lemon lemon juice
  • 1/3 cup chopped cilantro
  • 1 Teaspoon minced garlic
  • 1/2 cup finely chopped red onion
  • 1/2 cup diced red pepper
  • 1/4 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions 

  • Saute shallots in 2 tablespoons olive oil until soft. Add rice, saute 2-3 minutes. Add broth, bring to boil, then simmer 15 minutes. Let stand 5 minutes.
  • Fluff rice, cool completely. Add lemon zest, juice, herbs, garlic, onion, red pepper, Parmesan, and remaining olive oil. Gently stir and serve.

Notes

For extra flavor, chill the salad before serving.
