Fluffy lemon-infused ricotta pancakes perfect for a bright breakfast treat.

Ingredients

Dry ingredients

  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 tablespoons white sugar
  • 0.5 teaspoon salt

Wet ingredients

  • 1 cup milk
  • 0.5 cup ricotta cheese
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lemon zest

For cooking

  • 2 tablespoons butter (for cooking)

Additional toppings

  • Extra ricotta, lemon zest, powdered sugar & blueberries

Instructions 

  • Whisk dry ingredients in a large bowl.
  • Mix wet ingredients in a medium bowl until blended.
  • Combine wet and dry ingredients gently; do not overmix.
  • Heat a griddle with butter over medium heat.
  • Pour batter, cook until bubbles form, then flip and cook until golden.

Serve with extra toppings for added flavor.
