A flavorful and healthy chicken salad featuring long grain and wild rice, dried cranberries, and crunchy almonds, perfect for wraps or on its own.

Ingredients

Rice

  • 6 ounce Uncle Ben's® Long Grain and Wild Rice

Chicken

  • 2 cups cooked chopped chicken breast (rotisserie chicken works perfectly)

Dairy & Condiments

  • 0.5 cup non-fat plain Greek yogurt
  • 0.5 cup light or regular mayonnaise

Seasonings

  • 0.25 teaspoon salt
  • to taste black pepper (freshly ground)

Vegetables & Fruits

  • 0.5 cup diced celery
  • 0.33 cup dried cranberries
  • 2 green onions green onions (thinly sliced)
  • 1 lemon lemon (juiced and zested)

Nuts & Seeds

  • 0.33 cup slivered almonds

Wraps & Toppings

  • none tortillas or wraps (e.g., spinach herb wraps)
  • optional lettuce, tomato, broccoli slaw, avocado (for toppings)

Instructions 

  • Cook the rice according to package instructions and let it cool.
  • Mix Greek yogurt, mayonnaise, lemon juice, zest, salt, and pepper in a large bowl.
  • Add celery, cranberries, green onions, and rice; stir to combine. Fold in chicken and almonds.
  • Store in the refrigerator for up to 5 days.
  • Serve on its own or wrapped with your favorite toppings.

Notes

For extra flavor, add herbs or spices as desired.
