A hearty and flavorful low carb soup combining tender chicken, fresh mushrooms, and creamy cheese for a comforting meal.

Ingredients

Main

  • 2 tbsp olive oil
  • 2.5 lb chicken breasts (diced into 1-inch cubes)
  • 1 lb baby button mushrooms (sliced)
  • 1 lb baby Bella mushrooms (sliced)
  • 1 large yellow onion (finely chopped)
  • 8 cloves garlic (minced)
  • 2 tsp dried thyme
  • 2 tsp ground Marjoram
  • 5 tbsp grape juice
  • 5 cups chicken broth
  • 6 oz cream cheese
  • ½ cup Parmesan cheese (grated)
  • cup cheddar cheese (shredded)
  • Leftover mushroom pan-fried mushroom (for garnish)
  • Shredded cheddar cheese for garnish
  • Chopped parsley fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large pot, cook chicken for 10 minutes, flipping midway. Remove and set aside.
  • Sauté mushrooms for 6 minutes, reserve some for garnish.
  • Add onion, garlic, thyme, Marjoram, and grape juice; cook for 5 minutes.
  • Pour in chicken broth, bring to simmer, add chicken back, and cook for 10 minutes.
  • Add cream cheese, Parmesan, and cheddar; whisk until smooth. Garnish with reserved mushrooms, cheddar, and parsley.

Notes

Use fresh herbs for best flavor and consider adding a splash of lemon juice for brightness.
