Instructions
Heat olive oil in a large pot, cook chicken for 10 minutes, flipping midway. Remove and set aside.
Sauté mushrooms for 6 minutes, reserve some for garnish.
Add onion, garlic, thyme, Marjoram, and grape juice; cook for 5 minutes.
Pour in chicken broth, bring to simmer, add chicken back, and cook for 10 minutes.
Add cream cheese, Parmesan, and cheddar; whisk until smooth. Garnish with reserved mushrooms, cheddar, and parsley.
Notes
Use fresh herbs for best flavor and consider adding a splash of lemon juice for brightness.
