Delight in these tangy lemon bars with a coconut twist, perfect for a sweet and zesty treat.

Ingredients

Crust

  • 1 cup all-purpose flour
  • 0.5 cup butter, softened
  • 0.5 cup granulated sugar

Filling

  • 2 eggs
  • 0.67 cup granulated sugar
  • 0.67 cup all-purpose flour
  • 2 tsp grated lemon peel
  • 3 T fresh lemon juice
  • 1.5 cup sweetened flaked coconut

Instructions 

  • Line a 9-inch square pan with foil, spray with non-stick spray. Mix flour and sugar, cut in butter until coarse crumbs, press into pan. Bake at 350°F for 20 min.
  • Beat eggs, sugar, flour, and lemon juice until blended. Add lemon peel and coconut, mix until just combined. Spread over crust.
  • Bake for 25-30 minutes until set and edges are golden. Cool completely, then lift from pan and cut into bars. Dust with powdered sugar if desired.

Notes

For best results, chill the bars before cutting.
