Ingredients
Crust
1cupall-purpose flour
0.5cupbutter, softened
0.5cupgranulated sugar
Filling
2eggs
0.67cupgranulated sugar
0.67cupall-purpose flour
2tspgrated lemon peel
3Tfresh lemon juice
1.5cupsweetened flaked coconut
Instructions
Line a 9-inch square pan with foil, spray with non-stick spray. Mix flour and sugar, cut in butter until coarse crumbs, press into pan. Bake at 350°F for 20 min.
Beat eggs, sugar, flour, and lemon juice until blended. Add lemon peel and coconut, mix until just combined. Spread over crust.
Bake for 25-30 minutes until set and edges are golden. Cool completely, then lift from pan and cut into bars. Dust with powdered sugar if desired.
