A warm, comforting dessert featuring baked apples filled with a spiced oat mixture, drizzled with maple syrup.

Ingredients

Apples

  • 4 pieces apples (washed and cored)
  • 1 cup old fashioned oats
  • 0.5 cup pecans (chopped)
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.5 teaspoon ground ginger
  • 2 tablespoons olive oil or melted butter
  • 2 tablespoons maple syrup
  • 0.5 cup apple cider or water
  • extra butter for baking (optional) (see notes)
  • optional Lemon juice

Instructions 

  • Wash, dry, and core the apples.
  • Mix oats, spices, maple syrup, and oil; stuff into apples.
  • Place apples in a baking dish, pour cider, cover with foil, and bake for 30 minutes.
  • Uncover and bake for an additional 10 minutes, then let sit for 5 minutes before serving.

Notes

Optional lemon juice can be added for extra brightness.
