A flavorful and healthy skillet dish combining tender chicken, sweet potatoes, Brussels sprouts, and a maple Dijon sauce for a satisfying meal.

Ingredients

olive oil

  • 4 teaspoons extra virgin olive oil (divided)
  • 1 pound boneless skinless chicken breast (cut into bite-sized pieces)
  • Kosher salt Kosher salt (to taste)
  • Black pepper Black pepper (to taste)
  • 1/2 cup red onion (diced)
  • 1 cup sweet potatoes (peeled and diced)
  • 1 cup Brussels sprouts (quartered)
  • 1/2 sweet red apple diced
  • 1/4 cup low sodium chicken broth (more if needed)
  • 2 tablespoons maple syrup
  • 2 tablespoons grainy Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/3 cup low sodium chicken broth
  • 1/2 teaspoon fresh thyme
  • 1/2 teaspoon fresh rosemary

Instructions 

  • Whisk together sauce ingredients and set aside.
  • Heat 2 teaspoons of oil in a skillet, season chicken, and cook until done. Remove and set aside.
  • Add remaining oil, cook red onion, sweet potatoes, and Brussels sprouts for 6-8 minutes, deglazing with broth as needed.
  • Add diced apple and cook 2 minutes.
  • Return chicken, add sauce, and cook 2-3 minutes until heated through.

Notes

Use fresh herbs for best flavor and adjust salt to taste.
