A vibrant and nutritious bowl combining roasted sweet potatoes, tender chicken, fresh apples, and hearty grains, all drizzled with a flavorful maple Dijon dressing.

Ingredients

Dressing & Marinade

  • 0.5 cup Pure J.L. KRAFT Maple & Dijon Dressing & Marinade (add more for drizzling)
  • 2 chicken breast chicken breast (142g each)
  • 3 cups cooked quinoa
  • 1 large gala apple (sliced)
  • 1 large sweet potato (peeled and cubed)
  • 2 cups baby kale
  • 0.75 cup roasted pecans
  • 0.5 cup dried cranberries
  • 1 tsp cinnamon
  • 3 tbsp coconut oil

Instructions 

  • Preheat oven to 375°F (190°C).
  • Marinate chicken in 1 cup of dressing for 20 minutes.
  • Cube sweet potato, toss with coconut oil and cinnamon, then roast for 20-30 minutes.
  • Cook chicken in a skillet until done, then slice.
  • Combine roasted sweet potatoes, quinoa, apples, pecans, cranberries, and kale in bowls. Top with sliced chicken and drizzle with dressing.

Notes

Feel free to add more dressing for extra flavor.
