2chicken breastchicken breast(142g each)
3cupscooked quinoa
1largegala apple(sliced)
1largesweet potato(peeled and cubed)
2cupsbaby kale
0.75cuproasted pecans
0.5cupdried cranberries
1tspcinnamon
3tbspcoconut oil
Instructions
Preheat oven to 375°F (190°C).
Marinate chicken in 1 cup of dressing for 20 minutes.
Cube sweet potato, toss with coconut oil and cinnamon, then roast for 20-30 minutes.
Cook chicken in a skillet until done, then slice.
Combine roasted sweet potatoes, quinoa, apples, pecans, cranberries, and kale in bowls. Top with sliced chicken and drizzle with dressing.
