A crunchy, sweet, and nutty homemade granola perfect for breakfast or snacking, with optional dried fruit or chocolate chips.

Ingredients

Dry Ingredients

  • 3 cups Old Fashioned Rolled Oats (no instant or quick, gluten free if needed)
  • 2 cups Pecans (rough-chopped)
  • 3/4 cup Unsweetened Shredded Coconut
  • 1/3 cup Sunflower Seeds (hulled)
  • 1/4 teaspoon Fine Sea Salt
  • 1/2 teaspoon Cinnamon
  • 1/2 cup Coconut Oil (virgin, unrefined, melted and cooled)
  • 1/2 cup Maple Syrup
  • 1/2 teaspoon Vanilla Bean Paste or Vanilla Extract

Optional Add Ins

  • 1/2 cup Chocolate Chips (pre-bake, optional)
  • a few handfuls Chopped Dried Fruit (such as Turkish apricot, sour cherries, cranberries, or raisins, optional)

Instructions 

  • Preheat oven to 275°F (135°C). Line a sheet pan with parchment paper.
  • Mix dry ingredients (oats, pecans, coconut, sunflower seeds, salt, cinnamon, optional chocolate chips) in a bowl.
  • Combine melted coconut oil, maple syrup, and vanilla. Pour over dry ingredients and mix thoroughly.
  • Press mixture evenly onto the prepared pan. Bake at 275°F for 1 hour, then increase temperature to 300°F and bake for 20-25 minutes until golden.
  • Cool completely in the pan, then add dried fruit if desired. Store in an airtight container for up to 3 weeks.

Notes

For extra crunch, let the granola cool completely before breaking into clusters.
