A crunchy, sweet, and nutty homemade granola perfect for breakfast or snacking, with optional dried fruit or chocolate chips.

Instructions
Preheat oven to 275°F (135°C). Line a sheet pan with parchment paper.
Mix dry ingredients (oats, pecans, coconut, sunflower seeds, salt, cinnamon, optional chocolate chips) in a bowl.
Combine melted coconut oil, maple syrup, and vanilla. Pour over dry ingredients and mix thoroughly.
Press mixture evenly onto the prepared pan. Bake at 275°F for 1 hour, then increase temperature to 300°F and bake for 20-25 minutes until golden.
Cool completely in the pan, then add dried fruit if desired. Store in an airtight container for up to 3 weeks.
Notes
For extra crunch, let the granola cool completely before breaking into clusters.
