Delight in these warm, gooey cinnamon rolls topped with caramelized pecans and a rich maple glaze, perfect for a cozy breakfast or dessert.

Ingredients

Dough

  • 240 ml whole milk, warmed (about 100°F (38°C))
  • 135 g granulated sugar (divided)
  • 14 g active dry or instant yeast (2 packets)
  • 113 g unsalted butter (softened, cut into 4 pieces)
  • 2 large eggs (at room temperature)
  • 0.5 tsp salt
  • 563 g all-purpose flour (plus more as needed)
  • 2 tsp canola, vegetable, or olive oil (for bowl or use nonstick spray)

Pecan topping

  • 250 g chopped pecans
  • 113 g unsalted butter (melted)
  • 135 g packed light or dark brown sugar
  • 60 ml whole milk
  • 60 ml pure maple syrup
  • 0.25 tsp salt
  • 56 g unsalted butter (softened)
  • 100 g packed light or dark brown sugar
  • 2 tsp ground cinnamon

Instructions 

  • Mix warm milk, 2 tbsp sugar, and yeast; let sit 5 minutes until foamy. Beat in remaining sugar, butter, eggs, and salt. Gradually add flour until dough forms, then knead for 5 minutes. Let rise in a greased bowl for 2 hours until doubled.
  • Prepare pecan topping by melting butter with brown sugar, milk, and maple syrup; simmer 2 minutes. Spread pecans in a greased 9x13-inch pan and pour topping over.
  • Punch down dough, roll into a 12x18-inch rectangle, spread softened butter, sprinkle cinnamon-sugar mixture, then roll tightly into an 18-inch log. Cut into 12 rolls and place in the pan over pecans.
  • Cover and let rise 30-45 minutes until puffy. Preheat oven to 350°F (177°C). Bake rolls for 25-28 minutes until golden. Invert onto a serving platter and serve warm.

Notes

For best results, let the dough rest if it shrinks during rolling. You can prepare the rolls overnight and bake fresh in the morning.
