Ingredients

Main

  • 4 pounds chicken (4 to 4 1/2 pound whole chicken)
  • 2 cups butternut squash (peeled and cut into 1/2 inch cubes)
  • 1 lb tri-colored new potatoes (large cut in half or whole if small)
  • 1 lb Brussels sprouts (small leave whole, large cut in half)
  • 4 large shallots (peeled and quartered)
  • 2 tablespoons extra virgin olive oil
  • 1 tsp sea salt
  • 0.5 tsp pepper
  • 1 tablespoon REAL maple syrup (no fake stuff!)
  • 1 tablespoon spicy brown mustard
  • 0.25 cup fresh squeezed orange juice
  • 0.25 cup maple syrup
  • 1 tsp dried thyme
  • 4 tablespoons butter
  • 1 pinch sea salt and pepper

Instructions 

  • Remove chicken from fridge and preheat oven to 400°F (200°C).
  • Season chicken with salt and pepper, then roast in a pan for 1 hour 15 minutes, basting with glaze every 5 minutes.
  • Prepare glaze by simmering maple syrup, mustard, orange juice, thyme, and butter until slightly thickened.
  • Rest the chicken for 10 minutes, carve, and serve with roasted vegetables.
  • Optional: Brown vegetables further in the oven while chicken rests.

Notes

Ensure to baste the chicken regularly for a glossy, flavorful glaze.
