  • 1 large winter squash (about 2-3 pounds)
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon thyme or dried thyme (plus more for garnish)
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions 

  • Preheat oven to 400°F (200°C). Cut squash into wedges and toss with olive oil, maple syrup, thyme, and salt.
  • Arrange wedges on a parchment-lined baking sheet and roast for 20 minutes.
  • Flip wedges and roast for another 20 minutes, then broil on high for 1-2 minutes to caramelize.
  • Remove from oven, sprinkle with chopped walnuts and extra thyme if desired.

Notes

For extra flavor, garnish with fresh thyme or a drizzle of additional maple syrup.
