A warm, comforting soup combining roasted sweet potatoes and carrots with a touch of maple syrup for natural sweetness.

Ingredients

Vegetables

  • 4 medium-large sweet potatoes (cut into quarters)
  • 3-4 pieces carrots (cut into 2 inch pieces)
  • ½ red onion
  • 2 Tbsp olive oil
  • 2 Tbsp pure maple syrup
  • ½ - 1 tsp garlic powder
  • 3-4 cups vegetable broth or stock
  • ½ tsp pepper
  • ½ tsp sea salt (more or less to taste)

Instructions 

  • Preheat oven to 400°F (200°C). Arrange sweet potatoes, carrots, and onion on a parchment-lined pan and roast for 30-40 minutes.
  • Whisk together maple syrup and olive oil, then brush over roasted vegetables. Season with salt if desired.
  • Allow vegetables to cool slightly, then scoop out sweet potatoes and transfer all roasted vegetables to a blender.
  • Add broth and blend until smooth, adding more broth to reach desired consistency. Heat the soup if your blender doesn't heat it.
  • Serve hot, garnished with your favorite toppings like sliced almonds, cream, or herbs.
