A warm, comforting soup combining roasted sweet potatoes and carrots with a touch of maple syrup for natural sweetness.

Instructions
Preheat oven to 400°F (200°C). Arrange sweet potatoes, carrots, and onion on a parchment-lined pan and roast for 30-40 minutes.
Whisk together maple syrup and olive oil, then brush over roasted vegetables. Season with salt if desired.
Allow vegetables to cool slightly, then scoop out sweet potatoes and transfer all roasted vegetables to a blender.
Add broth and blend until smooth, adding more broth to reach desired consistency. Heat the soup if your blender doesn't heat it.
Serve hot, garnished with your favorite toppings like sliced almonds, cream, or herbs.
