Enjoy these sweet and savory roasted sweet potatoes glazed with pure maple syrup and cinnamon, perfect as a side dish or snack.

Ingredients

Sweet Potatoes

  • 2 lbs sweet potatoes (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 2 tablespoons pure maple syrup
  • ½ teaspoon ground cinnamon

Garnish (optional)

  • to taste chopped candied pecans or candied walnuts (for garnish)

Instructions 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil and lightly grease.
  • Toss sweet potatoes with olive oil and salt; spread in a single layer. Roast for 20 minutes.
  • Mix maple syrup and cinnamon in a small bowl.
  • Drizzle the maple cinnamon mixture over the sweet potatoes and stir to coat. Roast for an additional 5-10 minutes.
  • Transfer to a serving dish, garnish with candied nuts if desired, and serve immediately.

Notes

For extra crunch, sprinkle with additional candied nuts just before serving.
