A creamy, flavorful chicken pasta dish with sun-dried tomatoes and Parmesan, perfect for a romantic dinner.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • Salt, to taste Salt (for seasoning)
  • Black pepper, to taste Black pepper (for seasoning)

Cooking Oil

  • 2 tablespoons olive oil
  • 3 cloves cloves garlic, minced

Sun-Dried Tomatoes

  • 1/3 cup cups chopped sun-dried tomatoes (packed in oil, drained)

Broth & Cream

  • 1/2 cup cups chicken broth
  • 1 cup cups heavy cream
  • 3/4 cup cups freshly grated Parmesan cheese

Pasta

  • 8 ounces ounces fettuccine or penne pasta
  • Fresh basil or parsley, chopped for garnish Fresh basil or parsley (for garnish)
  • Salt (for pasta water) Salt (for boiling pasta)
  • Optional: crushed red pepper flakes or hot sauce for spice Crushed red pepper flakes or hot sauce (optional)

Instructions 

  • Season chicken with salt and pepper. Sear in olive oil until golden and cooked through, then rest and slice.
  • Sauté garlic, add sun-dried tomatoes, broth, and cream. Simmer until thickened, then stir in Parmesan.
  • Cook pasta in salted water until al dente, then drain and reserve some pasta water.
  • Combine sliced chicken with sauce, add pasta, and toss. Adjust sauce consistency with reserved water.
  • Garnish with chopped herbs and extra cheese if desired. Serve immediately.

Notes

For extra flavor, add crushed red pepper flakes or hot sauce to taste.
