Instructions
Season chicken thighs with paprika, Italian seasoning, salt, and pepper. Sear until golden and cooked through.
Cook pasta until al dente. Set aside.
In the same pan, sauté shallots, garlic, and onion in butter. Add flour and cook briefly.
Pour in chicken broth and heavy cream, then add sun dried tomatoes, tomato paste, spinach, and seasonings. Simmer until thickened.
Return chicken to the sauce, add cooked pasta, and toss to combine. Garnish with basil before serving.
Notes
Use fresh basil for the best flavor and adjust seasonings to taste.
