A flavorful baked salmon served with a rich, creamy sun-dried tomato sauce, perfect for a special dinner.

Ingredients

Spice Mixture

  • 0.75 teaspoon kosher salt
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • 0.75 teaspoon Italian seasoning
  • 0.5 teaspoon freshly cracked black pepper

Salmon

  • 4 ounces salmon fillets

Sauce

  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup chicken stock
  • 1 teaspoon chicken flavor “Better Than Bouillon” or bouillon cube
  • 0.75 cup freshly grated Parmesan cheese (plus more for serving)
  • 7 ounces sun-dried tomatoes, drained and roughly chopped
  • 0.75 teaspoon Italian seasoning
  • 0.5 teaspoon red pepper flakes (optional)

Fresh basil

  • 0.25 cup thinly sliced fresh basil leaves

Optional serving

  • to taste cooked pasta or mashed potatoes (for serving)

Instructions 

  • Preheat oven to 375°F (190°C). Mix salt, sugar, garlic powder, Italian seasoning, and pepper. Coat salmon with oil and spice mixture. Bake for 12-15 minutes.
  • Heat oil, cook garlic until fragrant, then add cream, stock, bouillon, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer until thickened.
  • Remove salmon skin, nestle cooked fillets into sauce, top with basil, Parmesan, and red pepper flakes. Serve over pasta or mashed potatoes.

Notes

For best flavor, use fresh basil and high-quality salmon.
