A flavorful grilled chicken dish with fresh herbs, lemon, and vegetables, perfect for a healthy outdoor meal.

Ingredients

Marinade

  • 1 tbsp fresh garlic, pressed or minced
  • 1.5 tsp salt
  • 0.75 tsp black pepper
  • 3 tbsp fresh herbs (oregano, thyme, rosemary) (combo or choose 1-2)
  • 1/3 cup olive oil
  • 2 tbsp lemon zest, minced
  • 1.5 lbs chicken breast, boneless and skinless
  • 2-3 cobs corn on the cob, husked
  • 1.5 lbs zucchini or yellow squash, cut into 1/2 inch rounds
  • 1 tbsp olive oil
  • Pinch salt and pepper
  • 2 tbsp fresh lemon juice
  • a sprinkle smoked paprika, Aleppo pepper or red pepper flakes

Instructions 

  • Mix garlic, salt, pepper, herbs, and lemon zest; set aside 1 tbsp of marinade.
  • Coat chicken with marinade, refrigerate for 30 min to 2 days.
  • Preheat grill; cook chicken 5-7 min per side until cooked through. Grill vegetables 2-10 min, then rest chicken 5-10 min.
  • Grill corn and zucchini until charred and tender. Toss zucchini and corn with olive oil, salt, and pepper.
  • Mix lemon juice with reserved marinade. Slice chicken, serve with veggies, and drizzle with lemon marinade.

Notes

Marinate chicken for best flavor and tenderness. Adjust grilling time for thicker cuts.
