A flavorful grilled chicken dish with fresh herbs, lemon, and vegetables, perfect for a healthy outdoor meal.
Ingredients
Marinade

fresh garlic, pressed or minced

lemon zest, minced

chicken breast, boneless and skinless

corn on the cob, husked

zucchini or yellow squash, cut into 1/2 inch rounds

fresh lemon juice
a sprinkle
smoked paprika, Aleppo pepper or red pepper flakes
Instructions
Mix garlic, salt, pepper, herbs, and lemon zest; set aside 1 tbsp of marinade.
Coat chicken with marinade, refrigerate for 30 min to 2 days.
Preheat grill; cook chicken 5-7 min per side until cooked through. Grill vegetables 2-10 min, then rest chicken 5-10 min.
Grill corn and zucchini until charred and tender. Toss zucchini and corn with olive oil, salt, and pepper.
Mix lemon juice with reserved marinade. Slice chicken, serve with veggies, and drizzle with lemon marinade.
Notes
Marinate chicken for best flavor and tenderness. Adjust grilling time for thicker cuts.
