Ingredients

Meat

  • 1.5 lbs boneless, skinless chicken breast (cut into 1-inch cubes)
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 3 tablespoons Mexican chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey

Additional

  • as needed Wooden skewers, soaked in water for 30 minutes
  • for garnish Fresh cilantro
  • for serving Lime wedges

Instructions 

  • Mix olive oil, lime juice, soy sauce, chili powder, cumin, paprika, garlic powder, onion powder, salt, black pepper, and honey to make marinade.
  • Marinate chicken cubes for at least 1 hour, then thread onto soaked skewers.
  • Preheat grill to medium-high. Grill skewers 10-15 minutes, turning until cooked and slightly charred.
  • Remove from grill, garnish with cilantro, and serve with lime wedges.

Notes

Soaking skewers prevents burning. Marinate for best flavor.
