Ingredients

Meat

  • 8 pieces small boneless chicken thighs (any visible fat removed)
  • 2 cloves garlic
  • 1 piece jalapeño pepper (seeds removed)
  • 3 tablespoons tomato paste
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 0.5 teaspoon oregano
  • a handful fresh coriander
  • half lime juice of lime
  • to taste salt and black pepper
  • 1 red bell pepper chopped into square pieces
  • 1 green bell pepper chopped into square pieces
  • 1 yellow bell pepper chopped into square pieces
  • 1 white onion chopped into square pieces

Instructions 

  • Blend spices, jalapeño, lime juice, coriander, salt, and pepper into a paste in a food processor, adding water if needed.
  • Dice chicken, coat with marinade, and refrigerate for a few hours or overnight.
  • Soak wooden skewers in water for 30 minutes.
  • Thread chicken, peppers, and onion onto skewers, alternating pieces.
  • Spray skewers and ingredients with cooking oil, then grill or bake until cooked through, about 15 minutes on barbecue or 25-30 minutes in oven.

Notes

Marinate the chicken overnight for best flavor and ensure even cooking.
