A flavorful and easy-to-make casserole combining beef, rice, beans, and cheese with Mexican spices.

shredded Mexican cheese, (divided in half)
Instructions
Preheat oven to 375°F (190°C). Spray a 9x13-inch baking dish.
Sauté onion and garlic in olive oil until softened; transfer to baking dish.
Cook ground beef until browned; drain excess grease and add to dish.
Add corn, beans, taco seasoning, salsa, rice, and 1 cup cheese; mix well. Pour broth over top.
Cover with foil and bake for 35 minutes. Remove foil, sprinkle remaining cheese, and bake uncovered for 5 minutes.
Notes
For extra flavor, top with fresh cilantro or sour cream before serving.
