Enjoy a flavorful and easy-to-make Mexican-inspired taco salad bowl, packed with seasoned beef and fresh toppings.

Ingredients

Meat and Seasonings

  • 1 pound lean ground beef or chicken or turkey
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • to taste Salt and Pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced (optional)
  • 0.25 oz green chilis (optional)
  • 15 oz can black beans, drained and rinsed
  • water as needed Water if mixture is too dry

Toppings

  • enough for 4 salads Lettuce (butter, romaine, iceberg, etc)
  • to taste tomatoes
  • to taste avocado
  • to taste sour cream
  • to taste black olives
  • to taste green onion
  • to taste red onion
  • to taste jalapeno peppers (raw or pickled)
  • to taste cilantro
  • to taste cheese
  • to taste low sugar salsa
  • to taste low sugar salad dressing

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Add ground meat and cook until no longer pink, about 5-7 minutes.
  • Season with salt, pepper, cumin, chili powder, onion, and garlic powders. Mix well.
  • Add diced onion and cook until tender. Stir in green chilis and black beans, warming through. Add water if mixture is dry and simmer briefly.
  • Serve beef mixture over lettuce in bowls, then top with your favorite toppings and serve.

Notes

For a vegetarian option, skip the meat and add more beans or vegetables.
