A flavorful and customizable bowl combining rice, beans, vegetables, and toppings inspired by Mexican cuisine.

Ingredients

Main Ingredients

  • 1 cup cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 unit onion, finely chopped
  • 2 cloves garlic, minced
  • 1 unit bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes, canned or fresh
  • 1 unit avocado, sliced
  • 1 cup shredded cheese, cheddar or Mexican blend
  • 0.25 cup fresh cilantro, chopped
  • 1 unit lime, juiced
  • to taste Salt and pepper

Optional toppings

  • to taste sour cream
  • to taste salsa
  • to taste jalapeños

Instructions 

  • Warm the olive oil in a skillet over medium heat. Sauté the onion and garlic until translucent, about 3 minutes.
  • Add the bell pepper and cook until tender, about 2-3 minutes.
  • Mix in the black beans, diced tomatoes, cumin, and chili powder. Cook for 5-6 minutes, then season with salt and pepper.
  • Assemble bowls with rice, bean mixture, avocado slices, cheese, and cilantro. Squeeze lime juice over each bowl before serving.
