These crispy mini tacos are packed with seasoned chicken and melted cheese, perfect for a quick and delicious snack or meal.

Ingredients

Main

  • 1 lb cooked shredded seasoned chicken breast (see notes for cooking options)
  • 8 oz shredded colby jack cheese
  • 20-24 tortillas street taco corn tortillas
  • to taste olive oil or cooking spray
  • to serve sour cream
  • to serve salsa
  • to serve fresh chopped cilantro

Instructions 

  • Preheat oven to 425°F (220°C). Place tortillas on a baking sheet and brush with olive oil.
  • Add chicken and cheese to each tortilla, then bake for 2 minutes until cheese melts.
  • Fold tortillas in half to form tacos and bake for another 12-15 minutes until crispy.
  • Serve with sour cream, salsa, and cilantro. Enjoy!
