Ingredients

Eggs and Sugar

  • 2 large eggs (room temperature)
  • 1 cup granulated sugar

Dairy and Oil

  • 1 cup Greek yogurt (or sour cream)
  • 1/2 cup extra LIGHT olive oil (not extra virgin)

Flavorings

  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Dry Ingredients

  • 2 cups all-purpose flour (measured correctly)
  • 2 tsp baking powder

Berries

  • 1/2 cup strawberries (hulled and diced)
  • 1/2 cup raspberries
  • 1/2 cup blueberries

Instructions 

  • Preheat oven to 400°F (200°C) and line a muffin tin with liners.
  • Beat eggs and sugar until thick, then add yogurt, oil, and vanilla, mixing just until combined.
  • Whisk together flour, baking powder, and salt; fold into batter gradually, avoiding overmixing.
  • Gently fold in berries, then divide batter into muffin cups.
  • Bake for 20-22 minutes until golden and a toothpick comes out clean. Cool and serve.

Use fresh berries for best flavor and texture.
