  • 1 teaspoon ground cinnamon

  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

Wet Ingredients

  • 1 cup grated carrots
  • ½ cup grated zucchini
  • ½ cup crushed pineapple drained
  • ½ cup unsweetened shredded coconut
  • ½ cup chopped walnuts or pecans
  • ½ cup raisins or dried cranberries

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients in another bowl, then combine with dry ingredients.
  • Fold in grated vegetables, pineapple, coconut, nuts, and dried fruit.
  • Divide batter into muffin cups and bake for 20-25 minutes.
