Ingredients

Spices and Seasonings

  • 0.5 tsp black pepper
  • 1 large onion
  • 1 tbsp olive oil
  • 1 tsp rosemary
  • 1 tsp salt
  • 2 cups low-sodium beef broth

Main Ingredient

  • 3 lb chuck roast

Instructions 

  • Season the chuck roast with salt and pepper.
  • Heat olive oil and sear the roast 3-4 minutes per side until browned. Transfer to slow cooker.
  • Chop carrots, potatoes, and onion. Place around the roast in the slow cooker.
  • Add garlic and beef broth, then sprinkle rosemary. Cover and cook on low 8-10 hours.
  • Shred the meat, mix with juices, and let sit 10 minutes to thicken.
