A delicious and quick recipe featuring tender chicken breasts stuffed with savory mushrooms and melted cheese, perfect for a satisfying meal.

Ingredients

Chicken

  • 2 pieces chicken breasts (220g or 7oz each, skinless and boneless)
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Butter

  • 2 tablespoons unsalted butter (30g)

Mushrooms

  • 7 oz mushrooms, sliced about 1/8" thick (approximately 200g)
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon thyme leaves

Fresh Baby Spinach

  • 2 cups fresh baby spinach

Cheese

  • 3 oz mozzarella cheese, sliced (or any cheese that melts well, 80g)
  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 375°F (190°C). Slice a pocket into each chicken breast and season with salt and pepper.
  • Sauté mushrooms, garlic, and thyme in butter until tender. Add spinach and cook until wilted.
  • Stuff the chicken breasts with mushroom mixture and sliced cheese. Secure with toothpicks if needed.
  • Heat olive oil in a skillet and sear chicken on both sides until golden. Transfer to oven and bake for 15 minutes.
  • Remove from oven, let rest for a few minutes, then serve hot.

Notes

For extra flavor, add herbs or spices of your choice.
