chicken breasts (220g or 7oz each, skinless and boneless)

Butter

unsalted butter (30g)
Mushrooms

mushrooms, sliced about 1/8" thick (approximately 200g)

cloves
garlic, finely minced
1/2
teaspoon
thyme leaves
Fresh Baby Spinach

fresh baby spinach
Cheese

mozzarella cheese, sliced (or any cheese that melts well, 80g)

olive oil
Instructions
Preheat oven to 375°F (190°C). Slice a pocket into each chicken breast and season with salt and pepper.
Sauté mushrooms, garlic, and thyme in butter until tender. Add spinach and cook until wilted.
Stuff the chicken breasts with mushroom mixture and sliced cheese. Secure with toothpicks if needed.
Heat olive oil in a skillet and sear chicken on both sides until golden. Transfer to oven and bake for 15 minutes.
Remove from oven, let rest for a few minutes, then serve hot.
Notes
For extra flavor, add herbs or spices of your choice.
