Ingredients

Chicken

  • 4 pieces boneless, skinless chicken thighs (or breasts)
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 3 cups vegetable or peanut oil (for frying)
  • 1/2 cup hot frying oil (scooped after frying)
  • 1/2 cup cayenne pepper
  • 1/4 cup light brown sugar
  • 2 tablespoons smoked paprika
  • 4 brioche buns buns
  • to taste Dill pickle chips

Instructions 

  • Marinate chicken in buttermilk for at least 30 minutes.
  • Mix flour with salt and black pepper; dredge chicken in the mixture.
  • Heat oil to 325°F (160°C). Fry chicken 6-8 minutes per side until golden and cooked through.
  • Mix hot oil, cayenne, brown sugar, and paprika into a paste. Dip fried chicken into the sauce to coat.
  • Assemble sandwiches on toasted buns, top with dill pickle chips, and serve immediately.
