These delicious no-bake energy bites combine pumpkin, peanut butter, and warm spices for a perfect fall snack.

Ingredients

Wet ingredients

  • 1 cup peanut butter
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup

Dry ingredients

  • 1 1/2 cups gluten free rolled oats (add more if too sticky)
  • 1/4 cup chia seeds
  • 1 tbsp pumpkin pie spice
  • 1/2 cup dark chocolate chips

Instructions 

  • Mix peanut butter, pumpkin, maple syrup, and vanilla until smooth.
  • Add oats, chia seeds, chocolate chips, and spices; stir into a dough.
  • Chill in the freezer for 15-20 minutes.
  • Form into balls and store in fridge or freezer.
